Quick Turkey Chili
Ingredients:
1 Tbsp olive oil
1 Sm onion, chopped
1 lb ground turkey breast
1 can (14.5 oz.) diced tomatoes w/jalapeno peppers
1 can (10.5 oz.) chickpeas, drained
1 can (10.5 oz.) black beans, drained
1 can (10.5 oz.) kidney beans, drained
1 can (14 oz.) low sodium chicken broth
¼ tsp salt
¼ tsp ground cumin
1/8 tsp ground cinnamon
Hot sauce
Instructions:
1. Heat oil in large nonstick skillet over medium-low heat. Add onion and sauté until soft, 3-5 minutes.
2. Add turkey and brown (about 5 minutes). Add tomatoes (with juices), chickpeas, beans, broth, salt, cumin, cinnamon, and hot sauce.
3. Stir and bring to a boil, then reduce heat and simmer 20 minutes.
